Chinese new year is almost here and there are so many yummy foods to be had at this time. Today, we are making a traditional Chaozhou style donut we call "Yew Jun". Usually we snack on this with some strong Wulong tea and its a custom to have these sweets near Chinese new year.

Think of it like a classic timbit that is deep fried dough with coated icing except that there is the aroma of the fried green onions that also comes through. It is the perfect combination of sweet and savoury that gives this dessert an unique twist.

Ingredients

  • Donut
  • 500 g flour (low gluten)

  • 100 g oil ( I used canola oil)

  • 170 g warm water

  • 1 tsp baking powder

  • 60 g sugar

  • Sugar Coating
  • 1/2 bowl of water

  • 1 bowl of sugar

  • 3 stalks of green onion

Directions

  • Combine the flour, baking powder, and oil.
  • Pour the warm water into the sugar and melt, then pour into the flour mixture.
  • Knead dough until well combined. Wrap in plastic wrap.
  • Adjust oven to rapid proof mode (110 F) and place dough in the oven for 30 minutes to rise.
  • After 30 minutes the dough should have risen and now it's time to shape the dough.
  • Grab a small piece of dough and roll into a long noodle-like strip.
  • Holding both ends together, twist the dough and then tuck the ends into the top of the donut.
  • Continue until dough is done. I like to make my donuts smaller so they are more bite-sized but this is more of a personal preference.
  • Next, it's time to deep fry the donuts. Add in an ample amount of oil (donuts must be submerged in oil) to a pot and turn on medium.
  • 10. When the oil heats up, place in donuts and fry until golden brown. Stir constantly.
  • 11. Remove from oil and place onto a paper towel to soak extra oil.
  • 12. Repeat until all donuts are fried.
  • 13. Next we will create a sugar coating for the donuts. Start by greasing a large pan or wok with some oil, turn the heat to high.
  • 14. Pour in 1 bowl of sugar and 1/2 bowl of water. Mix until the mixture starts to bubble.
  • 15. Pour in green onions and mix until combined.
  • 16. Turn off heat and pour in fried donuts. Now mix until your arm falls off!! Yes, you must continue mixing to make sure everything is evenly coated and doesn't stick together.
  • 17. When the sugar coating has hardened you can remove the donuts, and they are now complete!
