kcalIf you don't know what to eat but want to whip up something real quick - this recipe is for you! Dried noodles is something that we grew up eating as it was something simple, yet tasty and quite filling. This savoury dish is quick to make and can literally be made with any materials you have at home, and it's a chance to use the green onion topping you've made from our prior recipe.
Ingredients
- Noodles
1L water
400g noodles (can be any, even spaghetti)
3 eggs or protein of your choice
150g Shanghai bok choy (or any other veggies you have)
- Sauce
3 tsp peanut butter
3 tsp satay
2 1/2 tsp sesame oil
2 1/2 tsp soy sauce (to taste)
- Topping (optional)
1 tsp homemade green onion topping
Diced fresh green onion (to taste
Chili oil (to taste)
Directions
- Boil the water in a pot to cook the noodles. I used dry lanzhou style noodles but any type of noodle can be used.
- While the noodles cook you can combine the ingredients for the sauce in a bowl and separate it into three large bowls. The soy sauce can be adjusted based on how salty you would like it to be.
- Once the noodles have cooked, drain and equally distribute into the three bowls.
- Cook the veggies of your choice in boiled water. You can also cook any protein you'd like. I normally use thinly sliced hotpot meat as it cooks fairly quickly.
- For a more creamy texture, fry an egg to your liking. I like mine over and easy, so the yolk can be mixed into the noodles. It's also a good way to get some protein into your meal.
- Assemble the noodles, place the optional toppings in the bowl and mix it to ensure every thing in the bowl is covered in sauce. Enjoy!
