Beef brisket has always been one of my favourite dishes. The combination of the sweetness from onions, saltiness from the oyster sauce, and a hint of ginger makes the dish just taste perfect. The best thing about it? You can make a lot at once and keep it in the fridge or freezer to eat whenever you'd like by cooking it with any noodles you have!

Ingredients

  • Beef Brisket
  • 3 1/2 lbs beef brisket

  • 40g ginger

  • 1/2 small onion

  • 1/2 tbsp oil

  • 4 tbsp oyster sauce

  • 2 small pieces of rock sugar

  • 5 cups water

  • Noodles
  • 1 pack of rice noodles (around 600g)

  • 1 1/2 cup water

  • 1/2 tbsp fish sauce

  • Taiwanese Lettuce "A-Choy" (or veggie of choosing)

Directions

  • Beef Brisket
  • Wash the beef brisket and trim the unwanted fat.
  • Cut the beef brisket into 3cm cubes.
  • Chop the onion in half and the slice the ginger.
  • In a wok or frying pan, add the oil and wait for it to heat.
  • Fry the onion and ginger until the aromas release.
  • Add in the beef brisket and fry for around 2 minutes.
  • Then, add in the oyster sauce and coat the beef brisket evenly.
  • Pour the mixture of onion, ginger and beef brisket into a pressure cooker and add in the rock sugar.
  • Add the water in and pressure cook the beef brisket for 30 min. If you like you beef brisket more tender, you can cook it for longer.
  • Noodles
  • Blanch the noodles for 2 minutes and then run under cold water so it doesn't stick together. Be careful not to overcook the noodles or they will become mushy.
  • In a separate pot, add 1 1/2 cup of water and 2 cups of the broth from the beef brisket.
  • Add in some beef brisket and the Taiwanese Lettuce "A-Choy" or your veggie of choosing.
  • When the soup starts boiling, add in the fish sauce and adjust based on your taste. If you like it more saltier, add in more fish sauce or broth.
  • Assemble the noodle. The green onion topping will go well with this if you already have it in your fridge. Our homemade garlic topping completes the dish so perfectly (recipe coming soon). Enjoy!
