Chia Seed Oatmeal Bread loaf

1 cup of hot water
1/3 cup of Chia Seeds
1/2 cup of quick oats
2 1/4 teaspoons of dry active yeast
2 tablespoons of brown sugar
2 cups of all purpose flour
1 teaspoon salt
2 tablespoons butter, cut into small slices
Warm water as needed
Directions
- In a large bowl, mix quick oats and chia seeds with hot water and set aside
- In the standmixer, add yeast, sugar, flour and stir till well mixed
- Add in the chia seed/oat mixture and salt. Mix to combine with dough hook
- Add in pieces of butter one at a time
- Add in more warm water as necessary till dough comes together as 1 piece
- Oil bread pan and place dough in bread pan to proof in oven at 150 F with cover with plastic wrap for 1 hour
- Turn oven to 350 F and bake for 30 mins
- Enjoy!
Notes
- Usually it is recommended to proof twice, but I didn't and it turned out fine.
